Kelley with an E's Delicases: Mexican Casserole and Smores Pie


Mexican Casserole


This is one of our favorite casseroles....the kind that you cook for someone else for a meal as they come to visit or for you to drop off as they heal...and when they take the first bite their eyes cross from the ecstasy of the taste.

Make it.  You won't regret it.  Kudos to Mrs. Cornett who gave me this original recipe in 1988, that I have doctored up and altered... Mmmmmmmmmm.



Ingredients
1 lb ground meat/shredded chicken
1 package taco seasoning mix/water
1 can cream of chicken soup
1 can of creak of celery soup
1 15 oz can of evaporated milk
1 can chopped chiles (mild, med, hot)
2 cups shredded cheese
1 can of refried beans
1 pkg soft flour tortillas

Preparations
*Brown meat and drain.
*Add taco seasoning and 1/3 C water and simmer.
*In a pot, heat soups, milk, chiles, and 1 2/3 C of cheese.
*Heat beans in the microwave with two spoons of water to a spreadable consistency.
*Pour some cheese sauce in a baking dish.  Spread a tortilla with beans and put on top of sauce.  Sprinkle the tortilla with 1/4 of the meat mixture.  Repeat until all ingredients are gone.  Sprinkle the top with the rest of the cheese, covered with foil, and bake for 20-25 minutes, or until cheese in bubbly, at 350 degrees.
*Remove the foil and top with lime strips, crushed Doritos or Frito's and place under boiler until browned on top.
*Serve with chips, salsa, sour cream, lettuce, tomatoes...or a fresh salad with ranch dressing.

Smores Pie

This dessert was "invented" the other night when my husband said he had a hankering (Buckingham language is funny) for something sweet and I have been avoiding the grocery store.  I opened the pantry and this is what I concocted.  It was a smashing hit.  At home and at school!

Ingredients
1 box of large chocolate pudding
milk
1 graham cracker crust OR crumbs to make your own crust
1 bag mini marshmallows
1 Hershey bar

*Either make your own crust according to box directions or open the pre-made crust.
*Prepare pudding according to directions and pour into crust.
*Top with marshmallows and push down lightly with hand.
*Break up the Hershey bar into the small chunks and push each piece down into the pie.
*Sprinkle with a handful of graham crackers or graham cracker crumbs.
*Cover and chill for 6 hours or overnight.

You will be the hit of the "office"!  I was! :O)
